So I was reflecting on which part of this whole challenge would be the most difficult for me. Hands-down, the biggest challenge is going to be eating well-balanced healthy meals, and cooking them for my family too!

I love to cook, but finding the time, energy, and motivation to plan ahead is a different story. I can totally relate to those stupid Stouffer's commercials about family dinner. My kids are still little but I think I can see into the future and if we don't develop healthy habits now, who knows where we will be in 5 or 10 years when everyone is more busy!

First step for our family has been to actually eat at the table. I know, lame, right? (ha ha) Instead of Daniel and I plopping down on the couch with our plates of food, we are making a conscious effort to sit down with all four of us and eat together. No TV, no kids running around, just everyone sitting down enjoying a meal. We are getting much better at this although there's always room for improvement!

Second step, which has been way harder, has been to create a menu for the week. Because of our jobs & schedules, the best we can hope for is maybe 4 nights at home cooking dinner most weeks--but even that has been a struggle. My goal is now to use Monday (my day off) to create a menu for the week and do all the necessary shopping. So far I haven't done that yet today, but the day isn't over! I am working on it! I have a few go-to recipes that I will throw in the mix regularly, and I try to make at least one new recipe each week. Also as part of the challenge I am going to throw in some vegetarian dishes--we are a family of meat-eaters and it's good to try something new.

I'll keep you all posted on our progress in our quest to enjoy healthy, well-balanced meals as a family!

I have to admit that it was hard for me to make my recipes for this week. I have a shorter week and Kenley's out of town...so I opted to enjoy a few frozen dinners and use frozen vegetables and other hidden delights to spice things up. I never realized how much different it would be to make meals for two people vs. one. I can't imagine meals for a family!!!! Share your recipes with us :)

Amanda do you have a crockpot? I use mine all the time and it helps with getting meals ready for busy schedules. The trick to the crockpot is just remembering to put the stuff in it in the mornings. lol.

I do have a crockpot, and I LOVE IT--it's a lifesaver especially on those nights that we don't even walk in the door of the house till 7pm (or later). I've been reading an awesome crockpot blog:

She also has a book which I have bought for friends but I do not yet own. Once again, it just takes some planning ahead and dedication to shop for all the ingredients and get it all in in the morning! I will share recipes as I make them!
